What makes Kosova mantısı different from Kayseri mantısı?
Kosova mantısı is the layered, oven-baked manti of Balkan-Turkish kitchens. Unlike the famous Kayseri mantısı (tiny pinched dumplings simmered in broth and topped with garlic yogurt), Kosova mantısı stacks yufka-thin dough sheets with butter between each layer, places meat-filled squares on top, and bakes them until « nar gibi » (pomegranate-red). The result sits between a Bosnian börek and a traditional manti.
The cook here lays out the rhythm. Twenty bezeler (dough balls) become ten layers, rolled and oiled stack by stack. Closing the squares is the move that signals manti DNA: « karşılıklı köşeleri ortada birleştirip sıkıca bastırarak yapıştıralım » (bring the opposing corners together in the middle and press tight).
