What does “furba” mean in an Italian recipe?

When an Italian recipe calls something furba (feminine of furbo, “sly/cunning”), it is a compliment: it means a smart shortcut. A besciamella furba skips the long stovetop stir; a torta furba uses three ingredients and one bowl. The word reframes laziness as cleverness — you are not cutting corners, you are being furba. It is everywhere in modern Italian home-cooking content, so learners meet it long before the dictionary sense of a sly person.

Furbo/furba carries a whole cultural attitude in Italy — admiration for the person quick-witted enough to find the easy way through. In cooking it has become a fixed label: impasto furbo (no-knead dough), stampo furbo (a clever cake tin). The opposite of a recipe furba is one that is lunga e laboriosa — long and laborious.
