In Slovakia, strogánov is shorthand for bravčový strogánov: pork strips browned, then stewed with onion, mustard, tomato paste, mushrooms, pickles, and two kinds of cream. It’s a Russian-named dish that Slovaks (and Czechs) rebuilt around what’s in the fridge. Beef became pork. Kyslé uhorky (sour pickles) joined. Sour cream took the lead.
