What does “économe” mean in a French kitchen?
Économe is the ordinary word for careful with money: elle est très économe. It is also, with no change at all, the everyday French name for a vegetable peeler. The link is the blade — it lifts the skin and leaves the flesh, so almost nothing is wasted. On a French kitchen shelf, un économe is a peeler, and éplucheur is the plainer synonym next to it.
The name comes from a brand. Victor Pouzet, a blade-maker in Thiers, registered Économe for his peeler in 1929, and it slid into the language as a common noun the way genericised trademarks do. The verb for the job is éplucher — éplucher des pommes de terre — and the peelings are les épluchures. This clip saves the word for last as the hard question in a kitchen quiz.
