Why do Italian bars only let you use the bathroom if you order coffee?

Italian bars run on a small unwritten rule: “il bagno è solo per i clienti” (“the bathroom is only for customers”). If you walk in off the street and ask for the bathroom, the standard answer is no. If you order a one-euro espresso first, the bathroom appears, often unlocked with a chiave del bagno attached to a giant wooden keychain. The custom is so reliable that visitors learn to factor an espresso into every walk through an Italian city.
