What is a Hebrew sufgania?

סופגנייה (sufgania) comes from sfog, the Hebrew word for sponge (itself borrowed from Greek spongos). The food is the round, jelly-filled doughnut Israelis eat through the eight nights of Hanukkah, fried in oil to commemorate the Maccabean miracle of the Temple oil that lasted eight days. Bakeries swap the jam for dulce de leche, halva or pistachio cream by mid-December.
