Every Chinese restaurant menu has a 招牌菜 (zhāopáicài): the dish the place is famous for. The word is built from 招牌 (zhāopái), the painted signboard that hangs outside a shop, and 菜 (cài), dish or food. Historically, a shop’s best product was the one worth advertising on the sign — so the “signboard dish” became the signature item the whole street knows you for.

招牌 extends well beyond food: 招牌动作 (zhāopái dòngzuò) is a performer’s “signature move,” and 招牌笑容 (zhāopái xiàoróng) is a celebrity’s trademark smile. The pattern is useful: whenever 招牌 appears before a noun, it signals something that defines a person or place.
