How does Dutch “paddenstoel” cultivation work?

A paddenstoel is the Dutch word for a mushroom, a transparent compound from pad (toad) and stoel (chair, stool). Dutch fungiculture is small but globally significant: the Netherlands is one of the EU’s top exporters of champignons (button mushrooms) and runs research programs at Wageningen and TU Delft on edible exotic varieties. Mushroom paddenstoellaboratoria increasingly grow oyster, shiitake, lion’s-mane, and protein-rich fungi for the Dutch food industry. The country’s paddenstoel-foraging tradition is also active, especially in Drenthe and the Veluwe in autumn.
